Ingredients

  • 1 cup green lentils
  • 2 large carrots, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley (optional), for garnish

Instructions

  1. Rinse the green lentils under cold water until clear.
  2. In your crockpot, combine rinsed lentils, diced carrots, chopped onion, minced garlic, vegetable broth, cumin, smoked paprika, bay leaves, salt, and pepper. Stir well.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, check the lentils for tenderness; add water if needed.
  5. Remove bay leaves and stir in chopped parsley before serving.
