Instructions
- Rinse the green lentils under cold water until clear.
- In your crockpot, combine rinsed lentils, diced carrots, chopped onion, minced garlic, vegetable broth, cumin, smoked paprika, bay leaves, salt, and pepper. Stir well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, check the lentils for tenderness; add water if needed.
