  • 1 lb lean ground beef
  • 4 medium Yukon gold potatoes, cubed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 8 oz cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, brown the ground beef until crumbly (5-7 minutes). Drain excess fat.
  2. Sauté diced onions and minced garlic in the same skillet until onions are translucent (3-4 minutes).
  3. Transfer the beef mixture to a crockpot. Add cubed potatoes, beef broth, Worcestershire sauce, salt, and pepper. Stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  5. About 30 minutes before serving, stir in softened cream cheese until melted. Just before serving, mix in shredded cheddar cheese until fully incorporated.
  6. Serve hot and enjoy!
