- 1 (20 oz) package cheese tortellini (fresh or frozen)
- 1 cup heavy cream
- 2 cups fresh spinach (or 1 cup frozen)
- 1 cup chicken broth
- 1 cup grated Parmesan cheese (divided)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Sauté chopped onions and minced garlic until translucent.
- Crumble in the Italian sausage and cook until browned; drain excess fat.
- In your crockpot, combine the sautéed mixture with tortellini, heavy cream, spinach, chicken broth, and half of the Parmesan cheese. Stir well.
- Cover and cook on low for 4 hours or high for 2 hours.
