  • 1 lb Italian sausage (spicy or mild)
  • 1 (20 oz) package cheese tortellini (fresh or frozen)
  • 1 cup heavy cream
  • 2 cups fresh spinach (or 1 cup frozen)
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese (divided)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté chopped onions and minced garlic until translucent.
  2. Crumble in the Italian sausage and cook until browned; drain excess fat.
  3. In your crockpot, combine the sautéed mixture with tortellini, heavy cream, spinach, chicken broth, and half of the Parmesan cheese. Stir well.
  4. Cover and cook on low for 4 hours or high for 2 hours.
  5. Once cooked, serve hot topped with remaining Parmesan cheese.
