- 1 cup wild rice blend

- 2 stalks celery, diced

- 1 cup heavy cream or whole milk
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Sauté diced onion, carrots, celery, and minced garlic in a large pot with melted butter over medium heat until softened.
- Add seasoned chicken breasts and sear until golden brown on both sides (about 5 minutes per side).
- Stir in the wild rice blend and chicken broth; bring to a boil.
- Reduce heat to low. Add thyme and bay leaf; cover and simmer for about 45 minutes until rice is tender and chicken is cooked through.
