  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) fire-roasted diced tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 bell pepper (any color), chopped
  • 2 cups low-sodium beef broth
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent (about 5 minutes). Stir in minced garlic until fragrant.
  2. Increase heat to medium-high and add ground beef; cook until browned while breaking it apart.
  3. Stir in chopped bell peppers and cook until softened (3-4 minutes).
  4. Add the canned tomatoes (with juice) and drained beans to the pot; mix well.
  5. Sprinkle chili powder and cumin over the mixture; stir thoroughly to combine.
  6. Pour in beef broth until ingredients are submerged but not swimming. Bring to a boil, then reduce heat and simmer for 30 minutes.
