  • 1 cup green or brown lentils
  • 2 medium Yukon Gold potatoes, diced
  • 2 medium carrots, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water. Dice potatoes, carrots, and onion.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes).
  3. Add garlic and carrots; cook until fragrant (about 2 minutes).
  4. Stir in lentils and potatoes until coated in the aromatics.
  5. Pour in broth along with cumin, paprika, salt, and pepper. Bring to a boil; then reduce heat to simmer.
  6. Simmer uncovered for 30-35 minutes until lentils are tender.
