  • 1 lb lean ground beef
  • 2 medium zucchinis, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups shredded cheddar and mozzarella cheese (mixed)
  • 1 cup tomato sauce
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Break up any clumps.
  3. Add chopped onion and minced garlic; sauté until onions are soft (about 3-5 minutes).
  4. Stir in sliced zucchini, Italian seasoning, salt, and pepper; cook until zucchini is slightly tender.
  5. Pour in tomato sauce and simmer for an additional 5 minutes.
  6. In a greased baking dish, layer half the beef-zucchini mix, half the cheese, then repeat layers.
  7. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until golden brown.
  8. Let cool slightly before serving.
