  • 1 cup dried Great Northern beans (soaked overnight)
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme (or 2 tsp fresh)
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Prep your ingredients by dicing the ham and chopping onions, carrots, celery, and mincing garlic.
  2. Optional: In a skillet over medium heat, sauté onions and garlic until fragrant and softened.
  3. Add all ingredients into the crockpot: ham, beans, carrots, celery, chicken broth, bay leaves, thyme, and pepper. Stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
