  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme

Instructions

  1. Chop the onion and mince the garlic.
  2. In a large skillet over medium heat, add a splash of oil and sear the seasoned chicken breasts until golden brown on both sides (about 5–7 minutes per side). Remove from skillet.
  3. Add chopped onions and garlic to the skillet; sauté until soft and fragrant.
  4. Pour in chicken broth and heavy cream, scraping any bits off the bottom of the pan. Stir well to combine.
  5. Return chicken to the skillet, cover, and simmer on low for 15–20 minutes until fully cooked.
  6. Meanwhile, cook rice according to package instructions in a separate pot. Fluff with a fork when done.
  7. Plate the rice and top with smothered chicken and sauce.
