Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a large skillet over medium heat, heat oil and sauté the chopped onion until translucent (about 3-5 minutes). Add minced garlic and cook for an additional minute.
- Stir in the rinsed rice and toast for about 2 minutes until slightly golden.
- Pour in vegetable broth and tomato sauce, mixing well. Bring to a boil.
- Add cumin, chili powder, and salt, then reduce heat to low. Cover tightly and simmer for 15 minutes.
- Remove from heat but keep covered for an extra 5 minutes. Fluff with a fork, then stir in chopped cilantro and lime juice before serving.
