  • 2 cups vegetable broth
  • 1/2 cup tomato sauce
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a large skillet over medium heat, heat oil and sauté the chopped onion until translucent (about 3-5 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in the rinsed rice and toast for about 2 minutes until slightly golden.
  4. Pour in vegetable broth and tomato sauce, mixing well. Bring to a boil.
  5. Add cumin, chili powder, and salt, then reduce heat to low. Cover tightly and simmer for 15 minutes.
  6. Remove from heat but keep covered for an extra 5 minutes. Fluff with a fork, then stir in chopped cilantro and lime juice before serving.
