  • 4 large Portobello mushrooms
  • 1 cup lump crab meat
  • 4 oz cream cheese, softened
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Clean the Portobello mushrooms with a damp cloth and remove stems.
  2. In a bowl, mix crab meat, cream cheese, garlic, green onions, lemon juice, thyme, parsley, half of the Parmesan cheese, salt, and pepper until well combined.
  3. Gently fold in panko breadcrumbs until evenly distributed.
  4. Generously stuff each mushroom cap with the crab mixture.
  5. Top with remaining Parmesan cheese and additional panko breadcrumbs. Drizzle with olive oil.
  6. Place stuffed mushrooms on a baking sheet and bake for 25-30 minutes until golden brown.
