  • 3 large sweet onions (about 500g)
  • 1.5 cups all-purpose flour (180g)
  • 1/2 cup unsalted butter (115g), chilled and cubed
  • 2 large eggs (100g)
  • 1 cup heavy cream (240ml)
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and thinly slice the onions. In a skillet, melt butter over medium heat and sauté onions until golden brown, about 15-20 minutes. Set aside.
  3. In a bowl, combine flour and salt; cut in butter until crumbly. Add cold water gradually until dough forms; knead briefly.
  4. Roll out the dough to fit a 9-inch pie pan, then place it inside the pan.
  5. In another bowl, whisk together eggs, cream, nutmeg, salt, and pepper; fold in sautéed onions. Pour filling into the crust.
  6. Bake for 30-35 minutes until set and golden brown on top. Let cool slightly before slicing.
