  • 2 lbs beef chuck roast, cubed
  • 4 dried Ancho chiles
  • 2 dried Guajillo chiles
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Soak the dried chiles in hot water for about 20 minutes until softened.
  2. In a large pot, heat oil over medium heat. Sauté onions until translucent, then add minced garlic and cook until fragrant.
  3. Increase heat to medium-high and brown the beef cubes in batches for about 4-5 minutes on each side.
  4. Drain soaked chiles and blend with sautéed onions, garlic, cumin, oregano, and beef broth until smooth.
  5. Pour the blended sauce over the browned beef in the pot. Cover and simmer on low heat for 2-3 hours until the beef is fork-tender.
  6. Finish with lime juice and adjust seasoning as needed.
